Rick Moonen is an American seafood chef and one of the first to adopt sustainable fishing methods. He is known as "The Godfather of Sustainability". Moonen graduated from the Culinary Academy of America, then worked at La Côte Basque, at the circus and at the Water Club of New York, where he worked for six years. He went on to become Executive Chef and Partner at Oceana before opening a store in New York, awarded three stars by the New York Times. He is also a partner at Greek restaurant Molyvos, which also received three stars from the New York Times. He is one of the few chefs in New York to have three stars at two separate open restaurants in New York. In 2005, Moonen closed New York Restaurant to open RM Seafood cafe and Rick Moonen's r bar at Mandalay Bay in Las Vegas. Moonen is an advocate of sustainable seafood.
