Niklas Peter Ekstedt is a Swedish chef and restaurant manager. After attending Racklöfska Culinary High School in Åre ski resort in central Sweden, Ekstedt worked for Charlie Trotter in Chicago. Soon after, at the age of 21, Ekstedt opened his first restaurant, “Niklas”, in the Swedish port town of Helsingborg. Niklas was ranked as the best restaurant in Sweden by "Dagens Industri" in 2003 and the fifth best restaurant in Sweden by the restaurant guide "White" in 2005. In 2003, Ekstedt opened a second restaurant, "Niklas i Viken", one summer . The restaurant is located in the village of Viken, a few kilometers north of Helsingborg.
